Cookin' with uZ: Easy Peasy Paella

For those weeknights when you crave something indulgent but with minimal effort. This recipe saves on time by using Tastic Flavored Spanish Rice which is packed with flavor and will be doing the flamenco on your taste buds!



Easy Peasy Seafood Paella Recipe

Ingredients:

1 medium diced onion
2 diced peppers (any color)
2 chilies chopped
1 cup frozen peas
2 carrots chopped
2 tomatoes diced
1 Tbsp. tomato paste
12 slices chorizo sausage (or any smoky sausage)
2 packets Tastic Spanish rice
1 Tbsp. saffron 
2 cinnamon sticks
2 tsp smoked paprika
2 tsp regular paprika
2 tsp ground Coriander
4 bay leaves
500g mussels
500 prawn meat
500g calamari/ squid
Olive Oil
Salt and Pepper
Lemon Wedges (for serving)

Optional:
Crispy Fried Onions

Method:

Heat a nice good glug of olive oil in a large work on medium heat.
Add the chorizo and fry for 4mins then remove the chorizo and set aside.
Add the diced onion, chili, carrots and peppers and sauté until golden.
Add the peas, tomatoes and tomato paste and allow to cook for a few mins.
Add the bay leaves, cinnamon, ground coriander and paprika spices and cook for 5 mins.
Add the rice along with saffron and water as per packet.
Add the seafood and cook on medium until rice is done.
Add the chorizo back, another glug of olive oil and stir once.

At this point, no more stirring! Push the heat up to high for 4, maybe 5/6 mins max. 
You want the bottom of the pan to develop that all importance crust known as the socarrat - Don't skip this part, it totally enhances the flavor of the dish!

Turn off the heat and sprinkle on chopped parsley or fresh coriander and crispy onions.
Place a few lemon wedges on top and serve!
